Obviously the software you use will depend on your own requirements and tastes but for me this list represents my iPhone game development toolkit.
Hardware
1. A Mac 1.83 GHz Intel Core Duo, 2 GB RAM with 13" is fine to go.
2. A graphic tablet. Wacom tablet is recommended. This is optional thing for graphic designing.

1. CFXR lets you create sound effect in a matter of minutes. free

3. Audacity let you edit sound tracks, esp, before editingn in Bitnotic Chill to get final background music. free
Project Management
1. Process 3 lets you create checklists of tasks, gathers resources for researching your project. trial
2. OmniOutliner extends Process 3 but much more free form. trial
Distribution
1. iPhone Developer Program lets you release your game to AppStore. $99/years
Promotion
1. Wordpress/Blogger free
2. Jing allows you to capture video cast of your computer screen and exports to flash video which is useful for distributing gameplay footage and trailers. free
